Pepper Steak



Pepper Steak is extremely easy to make and can be tweaked to taste. To make it you use many mainstays in your kitchen, such as:
  • Some sort of sliced/diced/ground beef. One lbs (your choice of cut)
  • A large diced onion
  • A diced Green/Red/Yellow Pepper (or 2, blended colors for visual effect!)
  • A can of diced tomatoes
  • A can of diced mushrooms
  • A can of bean sprouts
  • Rice (3/4 cup)
  • Corn Starch (thickener) 1/2 teaspoon or more as needed
  • Olive Oil or whatever oil/margarine/butter you prefer
  • Water (simmering water then 1.5 cups for rice)
  • Seasonings:
    • Garlic powder or salt
    • Pepper
    • Salt
    • Curry powder
    • Soy Sauce
    • Red Wine. I suggest a nice inexpensive blend
    • Instant beef bouillon




Put some (an ounce or so) olive oil in your "large" skillet. You will need a skillet you can cover so the rice cooks correctly unless you cook the rice separately. Brown the beef then add bean sprouts, mushrooms, onions, and green peppers in. Add some seasoning to taste. Add a little red wine and some soy sauce. Periodically stir it about.

After the beef is browned, add the tomatoes, a cup of water and some more seasoning. Let it simmer down then add another cup of water. Let it simmer down. The more you simmer it down, the better the blending of elements.

If you are not making the rice separately, add a 1.5 cups of water and 3/4 cup of rice, stir then cover the skillet. Occasionally stir it up (say every 5 minutes or so) for 15-20 minutes.

If the dish is runny, get a 1/2 teaspoon of corn starch and 1.5 teaspoons of COLD water in a measuring cup, stir it up and put it in the dish then stir it up. Within one minute is should be thickened.

Let the dish sit for a few minutes, then serve.
